When life begins to accelerate in a way that it’s difficult to keep up with your regular routine, don’t throw out healthy decisions. On this Fresh Friday, I am reminded of the importance of carving out time to exercise, and most importantly; EAT CLEAN.
This has been a whirlwind week for me, I have not even been able to post on my blog. (I miss it) But I could not let Friday fly by without sharing how I keep it healthy for the family. Cooking with fresh vegetables is quick and easy, perfect for hectic times. Our healthy choices should not be the first thing thrown out when we have an overactive schedule.
- 6 organic russet potatoes
- 1 onion
- 3 cloves of garlic
- 2 tablespoons coconut oil
- Cajun seasoning
- vegan butter
Wash, and cut potatoes in large chunks. (leave peels on) Steam until soft. Brown onion and garlic. Toss steam potatoes in onion mixture, season with Cajun, add vegan butter if needed. Cook until lightly browned.
- 2 bunches fresh carrots
- olive oil
- garlic salt & pepper
Wash carrots, keep whole, cut the large ones in half lengthwise. Brush carrots with olive oil, season with garlic salt & pepper. Place carrots on cooling rack on top of a cookie sheet, bake at 450º for 30 minutes, or until tender.
- 4 artichokes
- vegan butter
Wash and trim artichokes. Place in steamer basket and cook until tender. Melt butter for dipping. Now, you have it! Great tasting vegetables with minimal effort. ENJOY!
I am so thankful I stuck to my healthy regime during a crazy week. By choosing right with each meal, it eliminates regret, and nourishes our bodies. Keep up your healthy choices and exercising, you will be amazed how stress levels are brought down, and you will feel more balanced, especially through the stormy days!
