Fresh Friday – Raw Power Bars

right now rawI love when friends share with me recipes that they think I would like. Well, this one friend in particular could not have been more right. I love these raw bars. The recipe she made was from the Forks Over Knives Cook Book, as usual, I tweaked the recipe a tad to satisfy my raw appetite.

I love this friend, (a.k.a. Coach Beast) she literally went from eating steak one night, to vegan the next morning. I love all my friends, but vegan friends are extra AMAZING! I wanted to share this recipe with you for Fresh Friday, I will be eating these all weekend, and enjoying every bite!

  • 1 cup pitted dates
  • 1 cup raw walnuts
  • 1/2 cup raw cashews
  • 1 banana
  • 1 vanilla bean (cut lengthwise and scoop seeds out)
  • 1/2 cup dried cranberries
  • dried shredded coconut
  • 1 orange
  • handful raw pumpkin seeds
  • handful raw sunflower seeds

Squeeze orange over dates and let soak.

Pulse nuts in food processor until they are broken up, but still chunky.

Drain dates. Add dates, banana, vanilla, and cranberries. Blend until just barely mixed. In a bowl add date mixture, stir in sunflower seeds & pumpkin seeds, mix well.

Sprinkle coconut on the bottom of a small square dish. Scoop out mixture on top of coconut, press gently with hands, and evenly spread to edges. Sprinkle coconut on top. Put in refrigerator for one hour and ENJOY!

It is great having friends with similar interest. Health, exercise, and a love for the outdoors are wonderful things to share with others. I hope your weekend is awesome, mine is already looking pretty sweet!

      1. What that is ridiculous we put ours in the freezer I also wonder if almond flower may harden them a bit for biking as it was pretty squishy after a 2 hour ride
