Fresh Friday – Raw Garden Tacos

IMG_6867I love Easter weekend because the focus is on resurrection, new life, and redemption. The best part of this week starts on Fresh Friday because we can make a choice to be refreshed and renewed by eating clean and making healthy choices.

I share a lot of our family’s vegan Mexican recipes with you, but I am often asked how do I enjoy Mexican food. Are you ready for some of the most vibrant tacos ever? The simplicity of eating a raw diet is an incredible experience, I never feel deprived only satisfied.

These tacos were created with whatever was growing in my garden or stuffed in my refrigerator. So, if you ever want to try a raw taco, anything goes, as long as it’s fresh, live, and organic. I made a raw pineapple salsa that gave these beauties a spicy sweet flavor!

TACOS

  • Romaine lettuce
  • 1/2 carrot (spiraled)
  • 1/4 beet (spiraled)
  • small onion sliced
  • 1/4 red bell pepper
  • 3 kale leaves chopped
  • cherry tomatoes sliced
  • handful raw pumpkin seeds
  • 1 small avocado sliced
  • black & green olives sliced

Prepare all your veggies and fill your lettuce!

SALSA

  • 1/2 cup pineapple chopped
  • 7 cherry tomatoes chopped
  • 1 tablespoon onion chopped
  • dried peppers to taste

Mix all ingredients together and ENJOY! SERVES 1
