One thing I love to do on Fresh Friday is stop by farmers’ markets. There is nothing better than organic locally grown produce. It is the perfect way to start your weekend.
I want to share a simple raw recipe with you. I have been a little sidetracked lately, sharing the family’s cooked vegan dinners with you, that I have neglected to share the raw ones. Everybody needs a little raw in their day, everyday!
I have not had bread in 3 years, and to be honest, I don’t miss it. Feeling good has a way of making me never want to go back to eating bread or other processed food. I stumbled across a raw organic sprouted wrap at Mothers, they are so delicious! Blue Mountain Organics has a really great wrap, and pretty much I’m wrapping up all kinds of veggies. This is perfect for spring. Here is my spring fever raw addiction.
- 1 Blue Mountain Tomato Wrap
- 1 avocado mashed
- 1/4 onion chopped
- 5 olives sliced
- handful spinach
- handful broccoli sprouts
- 7 cherry tomatoes sliced
- 2 slices yellow bell peppers
- salt & pepper to taste (optional)
Mash your avocado, add salt & pepper. Prepare all your veggies. Spread avocado mash on wrap and top with vegetables. Now, for the best part, roll it up and ENJOY! SERVES 1
