Vegan Daughter is at it again, she was hungry for mac & cheese and this is what she created. Whenever we have leftover pasta I save it to make pasta salad or in this case a very typical lunch. This is inexpensive and it hits the spot when you miss some of your old favorite cheese dishes.
Lori’s Vegan Mac & Cheese
- 1/2 cup Daiya Mozzarella
- 1/4 cup soy milk (nut milk, coconut milk)
- 1 tablespoon vegan butter
- garlic salt to taste
- 1 – 2 cups cooked organic pasta
- vegan bread
- 1 tablespoon melted vegan butter
- pepper to taste
On low heat warm all of the sauce ingredients until it becomes creamy. Add to pasta and mix well. Transfer into a small casserole. Using a blender pulse one slice of bread, add butter, season with pepper, mix well, top pasta with bread crumbs. You can either put this casserole in the broiler to blacken the breadcrumbs or bake at 350 degrees for 20 minutes. Serves one hungry vegan!
I never feel deprived on this raw vegan lifestyle, only satisfied. I do not miss dairy products, but I do have a sweet friend who spoiled me with raw desserts from Cafe Gratitude, and Oh My Goodness, who needs dairy when it taste this good? Not me!
