I love Fresh Friday! There is nothing better than driving out to a local farm and purchasing freshly picked vegetables and fruits for a week of really healthy meals. You should check out a CSA in your area. Field to table is the best way to ensure that you are eating what is in season. Seasonal eating is a great way to live!
Now, it’s time to piece together my recipe for stuffed peppers. Thanks for your patience, I hope you enjoy these! To make these vegan we simply use Daiya vegan cheese
- Make 2 cups of cilantro lime rice
- Roast 8 Pasilla Peppers
- Make Christmas sauce
- Grate 2 cups of cheese (your favorite)
Prepare baking dish with a little vegan butter. Add one cup of red sauce to rice mixture. Stuff peppers by alternating cheese, rice filling, pour Christmas sauce over peppers, and top with cheese. Bake at 375 degrees for 30-45 minutes.
This dish takes about two hours to make, but it is worth every minute. It is a family favorite of ours. Next time you have extra time and an appetite for Mexican food give these a try! I hope your weekend is filled with fresh food and healthy choices!!!Happy New Year, Right Now Raw
