I love Fresh Fridays! After a busy day of shopping I am inspired to make some vegan tacos for my family. These tacos are easy to make. I passed them through a Taco Tuesday fund-raiser for Lori’s climbing team and they sold out fast. Even the carnivores were enjoying them.
Sprouts has organic fingerling potatoes that are delicious in tacos. I also like using Simply Organic taco seasoning, and the Non GMO corn tortillas taco sliders from Whole Foods make these tacos HEALTHY!
Vegan Potato Tacos
- 3 lbs fingerling potatoes
- 2 onions finely chopped
- 6 tomatoes
- 1/4 – 1/2 cup coconut oil
- 1 packet Simply Organic Spicy Taco Seasoning
- salt & pepper to taste
- garlic salt to taste
- 4 avocados
- 1 purple onion
- 16 oz cherry tomatoes
- 2 bunches of cilantro
Steam potatoes until they are slightly soft. (10 minutes) Let potatoes cool. Cut in small pieces. Set aside.
Chop tomatoes and cook until sauce like, add taco seasoning. Mix well, add 1/4 cup hot water. Set aside.
In large skillet saute onion in coconut oil until golden. Add potatoes, seasonings, and tomato mixture. Cook until desired doneness.
Warm tortillas and stuff with organic toppings! Enjoy!
