Fresh Friday – Sweet Potato Burrito

right now rawI love Fresh Fridays when I have a new recipe to share with you. I am excited about this recipe for a lot of reasons. I am proud of our daughter, Lindsey, for creating it. She was inspired by a restaurant, then she put her spin on it, and now we have a delicious recipe!right now raw

This will be a regular dinner for our family because they devoured it! Mexican food can really be missed when you change over your lifestyle for a healthier one, that is what makes this burrito fun! It is loaded with goodness and it has quinoa which is a complete protein.right now raw                                            Sweet Rafferty Burrito

Burrito

  • 2 cups quinoa
  • 3 large sweet potatoes
  • 1  BPA free can organic black beans
  • 1 BPA free can organic pinto beans
  • 4 ears organic corn
  • organic non GMO flour tortillas
  • 4 avocados
  • 1 jalapeno pepper
  • 1/2 onion
  • 1/2 bunch cilantro
  • 1-2 limes
  • 10 tablespoons vegan butter
  • 1/2 cup Monterey Jack cheese
  • cumin
  • garlic salt
  • salt & pepper

Cook quinoa then add 3 tablespoons of vegan butter, and 1/2 chopped pepper. Season with cumin, salt & pepper to taste. Set aside.

Peel potatoes and cut in large cubes add water, boil until tender. (15-20 minutes) Once potatoes are soft drain and mash, add 4 tablespoons of vegan butter, season with garlic salt, salt & pepper to taste. Set aside

Heat beans with juice add 1/2 chopped jalapeno, 3 tablespoons of butter, and season with garlic salt to taste.

Wash and cut corn right off the cob, no need to cook. Mix quinoa, potatoes, beans, and corn together. Mix well and taste. Add more seasoning if needed.

Make fresh guacamole by mashing avocados, add chopped onions, chopped cilantro, squeeze limes, and season with garlic salt & pepper.

Now its roll time! Warm your tortillas and put as much as you want of potato/quinoa mixture, top with guacamole, cilantro, and cheese. Roll it up and ENJOY!  Hold the cheese and you will have a vegan burrito. Makes 8 burritosright now raw

I love preparing this for my family because I enjoy the guacamole, it is perfect with raw carrot chips. This makes for a great right now raw weekend! I hope yours is WONDERFUL!!!
