Fresh Friday – Roasted Turnips

Turnips-Farm-Stand-The-Lemon-Bowl-400x263When ever I am at the farm or farmers’ markets I can not resist root vegetables! This Fresh Friday was no exception. I came across a strange-looking vegetable and come to find out it was a turnip. So, I bought them, brought them home, and thought how in the world do I cook turnips? After a little bit of research I figured it out and the best part is that I can eat them raw! right now raw I loved the texture of eating these turnips raw, and they have a hint of bitter zest which I will enjoy in salads, tacos , and wraps. Are you ready for a quick easy roasted vegetable recipe? My family enjoyed this and it is loaded with nutrients.

  • 6 Turnips
  • 9 carrots
  • 1 onion
  • 1 fresh whole garlic
  • 3-4 tablespoons olive oil
  • 2 teaspoons fresh rosemary
  • salt & pepper to taste

Peel turnips, cut into cubes, and set aside in bowl. Wash and slice carrots, add to turnips. Chop one onion, add to turnips. Finely chop garlic mix into turnip mixture. Toss in olive oil, add fresh rosemary, and salt& pepper. Transfer to baking dish, cover with foil. Bake at 350 degrees for 30-40 minutes. Remove the foil for the last ten minutes untill golden brown.  ENJOY! SERVES 6
