I love when I am shopping on Fresh Fridays and I have to wait for my vegetables to be harvested. They are apologetic about the wait, but I am thrilled because field to table is what it’s all about!
We have an old family casserole that was hard for my family to let go of because it taste so good. Truth be told, this casserole is so unhealthy, I just could not continue to serve it to my family in good conscience. I have tweaked it and made several other similar dishes, but now my favorite rendition is simple, quick, and much healthier.
Healthier Than Chicken Divan
- 3 cups organic brown rice
- 4 cups steamed broccoli crowns
- 2 teaspoons curry powder
- 1/2 cup vegan butter (add more if you like)
- garlic salt and pepper to taste
Cook rice. Mix all these ingredients together and you have a great side dish or an entrée. My kids love the leftovers. Serves 6
