Fresh Friday – Raw Stir Fry

I am absolutely in love with these awesome carrots that I picked up at the local farm! The best part about Fresh Friday is that I will have plenty of carrots in our kitchen. I don’t use these beauties for juicing because they taste so amazing they must be enjoyed raw or steamed with vegan butter for the family. We never have left-overs when carrots are served for dinner. My juicing carrots I purchase at Sprouts, they have 25 lb bags, that are organic, and delicious!

My kitchen fills up fast on Fridays. The next conquest is to figure out what to cook the family for dinner. With these beautiful vegetables surrounding me I decided on a veggie stir fry. The family loved it, but that is not the recipe I want to share with you this week, because my raw dinner was just too amazing not to share!

Raw Stir Fry

This was inspired by preparing stir fry for the family. I kept putting aside a little bit of vegetables for my dinner and before I knew it I had an amazing raw entrée. The only differences between the two is that theirs is cooked, served with brown rice, and teriyaki sauce; mine is raw, served with raw peanuts and amazing Organic Ville Miso Ginger salad dressing. The biggest difference is that the raw dish is way more BEAUTIFUL!

Stir Fry Vegetables

  • 3 cups purple cabbage cut in strips
  • 5 mushrooms sliced
  • 1/2 cup carrots chopped
  • 1/2 cup cauliflower sliced ( I used purple and yellow)
  •  1/4 onion chopped
  •  1/4 cup peanuts
  •  handful of bean sprouts
  • Organic Ville Miso Ginger salad dressing

Drench all of these ingredients in the salad dressing and ENJOY! Serves one happy raw vegan! Have a wonderful weekend!!!!
