Fresh Friday – Raw Cabbage Salad

Right now raw Purple cabbage is at the farm and that makes Fresh Friday all the more colorful! I am loving this cabbage because it makes eating the rainbow easy and delicious.

This beautiful vegetable has lots more going for it than its appearance. It is ideal for weight loss, great brain food, detoxifies the body, keeps blood pressure from rising, anti-inflammatory, helps regulate blood sugar, plus, lots more. These are my favorite benefits of having cabbage a part of my diet.

Now, I would like to share a cabbage salad recipe with you that I have enjoyed twice this week and I am thinking about it for dinner tonight as well! YUM!

Cucumber Raw Wrap Salad

  • 15 cherry tomatoes
  • 1/4 purple onion
  • 1/4 avocado
  • 1/4 purple cabbage
  • 1 cup kale
  • 1/4 yellow bell pepper
  • 1 carrot
  • 1 cucumber
  • 1/2 raw pecans
  • Annie’s Organic Chili Lime Salad Dressing

Slice tomatoes. Chop onion, avocado, cabbage, kale and pepper. Run carrot through a spiraler. Using a mandoline slice cucumbers. Toss all ingredients with your favorite salad dressing. I love using Annie’s organics.  Toothpicks work great to wrap cucumber. Spoon salad into cucumber wrap, top with  chopped pecans.

I love raw cabbage, but for my vegetarian family I throw cabbage in stir fry, steam it, or saute with coconut oil. They love it. right now rawLiving right now raw is awesome! I hope you have a lovely weekend!

  1. Yum! Can’t wait to try this one. We went to the farm off of Victoria and Madison, and we bought beautiful veggies and strawberries! The owner told us that they are not an organic farm. Where do you buy your organic produce?
